I learned this technique from Becca Feeken, where she shows you in a video tutorial how to punch different shapes and sizes of mats with a corner punch. I used my pansy punch from MS.
Another technique is on how to punch around a circle with a corner punch. I used an old flower corner punch. Once you get the hang of it, it is really quite easy.

Maybe a better picture without the flash, you can see the dimension in the card a lot better.
